Winter Root Vegetable and Chorizo Stew

This recipe is inspired by the traditional Spanish dish 'Fabada Asturiana', which is a hearty bean and chorizo stew from the Asturias region of Spain. We'll be using seasonal root vegetables, smoked paprika, and cannellini beans for a bit of a twist.
Ingredients (for 2)
- Olive oil - 2 tablespoons
- Chorizo sausage - 200g - cut into 1/2 inch pieces
- Large onion - 1 - chopped
- Garlic cloves - 2 - minced
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Medium carrots - 2 - peeled and cut into 1/2 inch pieces
- Medium parsnip - 1 - peeled and cut into 1/2 inch pieces
- Medium turnip - 1 - peeled and cut into 1/2 inch pieces
- Canned cannellini beans - 400g can - drained and rinsed
- Chicken or vegetable stock - 500ml
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - 🍳👨🍳🧅Heat olive oil in a large saucepan or Dutch oven. Add chorizo and onion, cook for about 8-10 minutes or until onions are soft and chorizo browned.

Step 2 - 🧄🌶️🥢Add garlic, smoked paprika, cumin, and dried oregano. Cook, stirring constantly, for about 1-2 minutes or until fragrant.

Step 3 - 🥕🥒🧅Add carrots, parsnip, and turnip. Cook for about 5-7 minutes or until the vegetables start to soften.

Step 4 - 🍲🥄👩🍳Add cannellini beans and stock. Bring to a simmer and cook for about 20-25 minutes or until all vegetables are tender and the flavors have melded together.

Step 5 - 🧂🍽️🍞Season with salt and black pepper to taste. Serve hot with crusty bread or over steaming rice.
Additional
This stew can be easily modified to accomodate for different vegetables depending on what's in season or available in your fridge. Sweet potatoes, celery root, and butternut squash would all be great options. You can also add a handful of chopped kale or spinach to make it even more nutritious. This dish can be made up to a few days in advance and reheated before serving. The smoked paprika in the recipe will give the stew a smoky flavor that will make you feel like you're in Spain, enjoying a cozzy winter day.
