For this recipe, I have created a wholesome and flavorful dish inspired by Japanese cuisine, perfect for a warm day in March. This main course features juicy salmon, nutty soba noodles, and crisp snow peas, all drenched in a tangy and savory sauce made with yuzu and miso. The dish is refreshing, easy to make, and highlights the freshness of the ingredients.
Ingredients (for 4)
- Salmon fillet with skin - 4
- Yuzu juice - 1/2 cup
- White miso - 1/4 cup
- Soy sauce - 1/4 cup
- Honey - 2 tbsp
- Mirin - 1/4 cup
- Garlic cloves, finely minced - 2 - finely minced
- Grated ginger - 1 tsp - grated
- Soba noodles - 1/2 lb
- Snow peas, trimmed - 1/2 lb - trimmed
- Vegetable oil - 1 tbsp
- Toasted sesame oil - 1 tsp
- Salt - to taste
- Pepper - to taste
- Toasted sesame seeds - - for garnish
- Sliced scallions - - for garnish

Step 1 - π‘οΈπ₯πPreheat the oven to 375Β°F.

Step 2 - πΆπ―πMake the yuzu-miso sauce by whisking together yuzu juice, white miso, soy sauce, honey, mirin, minced garlic, and grated ginger in a small bowl until combined.

Step 3 - ππ§π₯Bring a pot of salted water to a boil. Add soba noodles and cook according to package directions until al dente.

Step 5 - π₯π³π§Heat a large oven-safe skillet over medium-high heat. Add salmon fillets to the skillet, skin-side down, and cook for 3-4 minutes until the skin is crispy. Flip the salmon fillets over and place the skillet in the oven to finish cooking for another 5-7 minutes until the salmon is cooked through but still juicy and tender.

Step 6 - π₯’π₯¦πDrain the soba noodles and rinse under cold water to chill. Toss chilled soba noodles with snow peas and sesame oil in a large bowl.

Step 7 - π½οΈππDivide soba noodles and snow peas among four plates and top each with a salmon fillet. Spoon the yuzu-miso sauce over the salmon and noodles, and sprinkle with toasted sesame seeds and scallions.
