Ingredients (for 2)
- Large zucchini - 2 - sliced into thin rounds
- Red and yellow bell peppers - 1 each - julienned
- Cherry tomatoes - 15 - halved
- Garlic cloves - 4 - minced
- Fresh basil - a handful - chopped
- Fresh thyme sprigs - few - leaves picked
- Olive oil - 2 tablespoons
- Salt - to taste
- Freshly ground black pepper - to taste

Step 2 - 🍳🌿🔥Heat olive oil in a large skillet over medium heat. Add minced garlic and fry until golden.

Step 3 - 🍅🍳🌱Add halved cherry tomatoes to the skillet. Season with salt, pepper, and a pinch of fresh thyme. Cook for about 5 minutes, until tomatoes start to break down.
