This soup combines the hearty, earthy flavor of Portobello mushrooms with a plethora of African spices to create a unique soup that's both savory and warming. The tomato base adds a subtle sweetness which complements the spiciness and the robust texture of the mushrooms.
Ingredients (for 4)
- Large portobello mushrooms - 4 - diced
- Large onion - 1 - chopped
- Garlic cloves - 3 - minced
- Large red bell peppers - 2 - diced
- Vegetable broth - 4 cups
- Diced tomatoes - 2 cups
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - a half teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - handful - chopped
- Olive oil - 2 tablespoons
- Crumbled feta cheese - for garnish
- Whole grain rolls - for serving
Preparation

Step 1 - 🥘🔥🫒In a large pot, heat 2 tablespoons of olive oil over medium-high heat.

Step 2 - 🧅🔪🍲Add 1 large chopped onion and 3 minced cloves of garlic. Sauté until onions are translucent.

Step 3 - 🍄🫑🥘Add 4 large diced Portobello mushrooms and 2 large diced red bell peppers. Cook until mushrooms are tender.

Step 4 - 🧂🌶️🥄Add 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, a half teaspoon of Cayenne pepper, and your preferred amount of salt and black pepper. Stir until veggies are evenly coated.

Step 5 - 🍅🥣🔥Add 2 cups of diced tomatoes and 4 cups of vegetable broth. Bring the mixture to a simmer.

Step 6 - ⏲️🛢️🔥Cover the pot and cook for 15 mins on low heat.
