This recipe is a twist on the classic American breakfast of eggs and toast. It includes seasonal ingredients like asparagus, mushrooms and spinach, and the addition of a rich hollandaise sauce will make it special. Ingredients (for 2)
- English muffin - 1 - split and toasted
- Asparagus spears - 4 - trimmed
- Mushrooms - 4 oz - sliced
- Fresh spinach - 2 oz
- Large eggs - 2
- White vinegar - 1 tablespoon
- Butter - 2 tablespoons
- Egg yolks - 2
- Lemon juice - 1/2 tablespoon
- Unsalted butter - 1/4 cup - melted
- Salt - to taste
- Freshly-ground black pepper - to taste
- Parsley - Chopped - for garnish

Step 1 - 🍳💧🍶Fill a saucepan with enough water to come 2-3 inches up the side and bring it to a simmer. Add white vinegar to the water.

Step 2 - 🥦🍄🍴Melt 2 tablespoons of butter in a medium skillet over medium heat. Add sliced mushrooms and trimmed asparagus spears. Sauté for 4-5 minutes until cooked through. Add fresh spinach and cook until wilted.

Step 3 - 🍳🍋🍯Whisk together egg yolks, lemon juice, and salt in a medium mixing bowl. Place the mixing bowl over a saucepan of barely-simmering water and whisk rapidly until the yolks have thickened and lightened in color. Slowly drizzle in melted butter while whisking constantly until fully incorporated and the hollandaise is thick.

Step 4 - 🥚🍶🔥Crack the eggs one at a time into a small bowl. Gently drop each egg into the simmering water and cook for 3-4 minutes or until the white is set but the yolk is still runny.

Step 5 - 🍽️🥪🥦Place the toasted English muffin halves on two plates. Top each half with some of the sautéed vegetables. Using a slotted spoon, carefully remove each poached egg from the water and place one on each muffin half. Drizzle with hollandaise sauce and garnish with chopped parsley.
