A little about this dish

This recipe is a twist on the classic American breakfast of eggs and toast. It includes seasonal ingredients like asparagus, mushrooms and spinach, and the addition of a rich hollandaise sauce will make it special. This dish is perfect for a leisurely brunch with friends or a romantic breakfast for two.

Ingredients (for 2)

  • English muffin1split and toasted
  • Asparagus spears4trimmed
  • Mushrooms4 ozsliced
  • Fresh spinach2 oz
  • Large eggs2
  • White vinegar1 tablespoon
  • Butter2 tablespoons
  • Egg yolks2
  • Lemon juice1/2 tablespoon
  • Unsalted butter1/4 cupmelted
  • Saltto taste
  • Freshly-ground black pepperto taste
  • ParsleyChoppedfor garnish

Preparation

  1. Step 1 — 🍳💧🍶
Fill a saucepan with enough water to come 2-3 inches up the side and bring it to a simmer. Add white vinegar to the water.
  2. Step 2 — 🥦🍄🍴
Melt 2 tablespoons of butter in a medium skillet over medium heat. Add sliced mushrooms and trimmed asparagus spears. Sauté for 4-5 minutes until cooked through. Add fresh spinach and cook until wilted.
  3. Step 3 — 🍳🍋🍯
Whisk together egg yolks, lemon juice, and salt in a medium mixing bowl. Place the mixing bowl over a saucepan of barely-simmering water and whisk rapidly until the yolks have thickened and lightened in color. Slowly drizzle in melted butter while whisking constantly until fully incorporated and the hollandaise is thick.
  4. Step 4 — 🥚🍶🔥
Crack the eggs one at a time into a small bowl. Gently drop each egg into the simmering water and cook for 3-4 minutes or until the white is set but the yolk is still runny.
  5. Step 5 — 🍽️🥪🥦
Place the toasted English muffin halves on two plates. Top each half with some of the sautéed vegetables. Using a slotted spoon, carefully remove each poached egg from the water and place one on each muffin half. Drizzle with hollandaise sauce and garnish with chopped parsley.
  6. Step 6 — 👩‍🍳🥚🥂
Serve immediately and enjoy your delicious Eggs Benedict!

A final fox tip

You can swap the asparagus and mushrooms for other seasonal vegetables, such as zucchini or bell pepper. If you want to make it extra indulgent, you can add bacon or smoked salmon to the dish. Kids can help with toasting the English muffins, stirring the hollandaise sauce, and assembling the dish.
