Our Japanese-inspired smoothie offers an unexpected twist by incorporating cauliflower, along with traditional autumn fruits, to create a creamy, nutrient-rich treat. The sweetness of apples and pears blends harmoniously with the light, earthy flavor of cauliflower, while matcha offers a vibrant color and a subtle hint of bitter depth.
Ingredients (for 4)
- Cauliflower - 1 cup - steamed and cooled
- Large apple - 1 - peeled, cored, and chopped
- Large pear - 1 - peeled, cored and chopped
- Matcha green tea powder - 2 teaspoons
- Unsweetened almond milk - 2 cups
- Maple syrup - 2 tablespoons - or more to taste
- Vanilla extract - 1 teaspoon
- Lime slice - 1 - for garnish
- Chia seeds - 1 teaspoon - optional
