This recipe is a twist on a classic American dish - Pancakes! Bursting with seasonal flavor, these fluffy pancakes are made with sweet corn, crispy bacon and blueberries. They're perfect for a brunch that you're hosting or attending, it's a winning dish to surprise your guests.
Ingredients (for 4)
- All-purpose flour - 1 cup
- Yellow cornmeal - 1/2 cup
- Sugar - 3 tbsp
- Baking powder - 2 tsp
- Baking soda - 1/2 tsp
- Salt - 1/2 tsp
- Buttermilk - 1 cup
- Eggs - 2 large - lightly beaten
- Unsalted butter - 3 tbsp - melted
- Sweet corn kernels - 1 can (8.75 oz) - drained
- Bacon - 4 slices - cooked until crispy and chopped
- Fresh blueberries - 1/2 cup
- Maple syrup - - to serve

Step 1 - 🌡️🔥👨🍳Preheat the oven to 200°F.

Step 2 - 🥣🧂🌽Whisk together the all-purpose flour, cornmeal, sugar, baking powder, baking soda, and salt in a large mixing bowl until well combined.

Step 3 - 🥛🥚🧈In another bowl, whisk together the buttermilk, eggs, and melted butter until blended. Pour this mixture into the dry ingredients and stir until just combined, trying not to overmix the batter.

Step 4 - 🌽🥓🫐Fold in the drained corn kernels, chopped bacon and fresh blueberries. Stir gently to combine.

Step 5 - 🍳🥞🔥Heat a non-stick griddle or a large skillet over medium-high heat, until hot. Spoon approximately 1/4-cup measures of the batter onto the skillet to form pancakes. Cook the pancakes for around 2 minutes on each side or until golden brown, flipping once during cooking.

Step 6 - 🚪🌡️🥞Remove the pancakes from the skillet and place them onto a baking sheet in the oven to keep them warm while you cook the remaining pancakes.

Step 7 - 🍽️🥞🍁Once all the pancakes have been made, remove them from the oven and serve warm with plenty of maple syrup drizzled on top.
Additional
For a vegetarian option, simply omit the bacon. You can even add more roasted corn kernels if you want more veggies. Kids can help measure and stir the ingredients, they'll have fun with the batter turning blue as they add in the berries. You can also make a large batch and freeze them to pop in the toaster for a quick breakfast on busy weekdays.
