This unique dish blends the powerful flavors of Cajun cuisine with the sweet-tartness of ripe blueberries. It's an improvisation on traditional Jambalaya, reinvented as a refreshing warm-weather main meal. The blueberries add a pop of color, contrasting beautifully with the spicy Cajun seasoning and succulent sausage, shrimp and chicken.
Ingredients (for 4)
- Fresh mature blueberries - 1 cup
- Cajun-style andouille sausages - 4 - sliced
- Chicken breast - 200 grams - diced
- Shrimp - 200 grams - peeled and deveined
- White long grain rice - 2 cups - washed and drained
- Onion - 1 - finely chopped
- Bell peppers - 2 - diced
- Garlic - 2 cloves - finely minced
- Cajun seasoning - 1 tablespoon
- Worcestershire sauce - 1 teaspoon
- Canned diced tomatoes - 400 grams
- Chicken stock - 4 cups
- Olive oil - 2 tablespoons
- Salt - to taste
- Freshly ground black pepper - to taste
- Parsley - - for garnishing

Step 1 - 🍳🥩🔥In a large heavy skillet or Dutch oven, heat the oil over medium heat. Add the sausage and chicken to the pan, saute until browned, then set aside.

Step 6 - 🍤🍗🔥Add the cooked sausage, chicken, and raw shrimp to the pan. Cover and cook for 5 more minutes, until the shrimp are cooked.

Step 7 - 🫐🧂🌿Stir in the fresh blueberries. Test for seasoning, then add salt and pepper as needed. Garnish with parsley and serve immediately.
