Ingredients (for 2)
- 1 bunch of kale - 1 bunch (about 4 cups) - rinsed, stems removed and chopped
- Cajun seasoning - 1 tablespoon
- 1 red bell pepper - 1 - diced
- 1 medium onion - 1 medium - diced
- Garlic - 3 cloves - minced
- 1 can cannellini beans - 1 can (15 oz.) - drained and rinsed
- Vegetable broth - 4 cups
- Olive oil - 1 tablespoon
- Salt and black pepper - to taste
- Green scallions and crumbled feta cheese - To garnish - chopped (scallions), crumbled (feta cheese)
Preparation

Step 1 - π² β π° β π«Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper. Cook until the vegetables are softened, which should take about 5 minutes.

Step 2 - π² β π§ β πΆοΈInto the same pot, stir in the minced garlic and Cajun seasoning. Cook until aromatic, approximately 1 minute.

Step 3 - π² β π₯¬Add the chopped kale and cook it until it starts wilting. This should take around 2 minutes.

Step 4 - π² β π₯« β π΅Stir in the cannellini beans and vegetable broth into the pot. Bring the soup to a simmer.
