Today's recipe is called 'The Cajun Fog', offering a unique fusion of Keto diet-worthy ingredients and soulful Cajun flair. Imagine juicy shrimp, enveloped in a smoky blend of Cajun spices, resting on a crunchy hollowed-out bell pepper garnished with fresh arugula. All this is bursting with flavors, whilst being healthy, and of course, Keto-friendly!
Ingredients (for 2)
- Shrimp - 1 cup - peeled, deveined, tail off
- Large bell peppers - 2 - tops cut off and hollowed
- Arugula - a handful - washed and dried
- Cajun spice - 2 tsp - store-bought or home-made
- Olive oil - 2 tbsp
- Lemon - juice from half
- Salt - to taste
- Ground black pepper - to taste
Preparation

Step 1 - 🍳🔥🫒Heat the olive oil in a pan over medium heat.

Step 2 - 🍳🍤🔁Once the oil is heated, add the shrimp and cook for 2-3 minutes until they turn pink.

Step 3 - 🍤🌶️🧂Sprinkle Cajun spice, salt, ground black pepper over the shrimp, stir well to coat evenly. Continue to cook for an additional 2 - 3 minutes.

Step 4 - 🍳🍋🔄Remove the pan from heat, squeeze the lemon juice over the shrimp and give one last stir to combine.

Step 5 - 🫑🍤🥄Fill the prepared bell peppers with the cooked Cajun shrimp.

Step 6 - 🍽️🥗🔥Garnish with fresh arugula and serve warm.
Additional
