Preparation

    Heat half the olive oil and butter in a pan over medium-high heat. Add the thinly sliced onion and sprinkle with a pinch of salt. Stir occasionally until the onions are caramelized.

    Remove onions from the pan and set aside. In the same pan, sauté the roughly chopped wild mushrooms until they soften and release their juices. Remove and set aside.

    In the same pan, cook the strips of pancetta until crispy. Place them on a paper towel to remove any excess grease.

    In a pot, prepare the uncooked polenta as per packet instructions until creamy. Stir in the remaining butter.

    Serve hot creamy polenta on plates. Top with caramelized onions, sautéed wild mushrooms, pancetta crisps and scattered green peas. Finish with a sprinkle of finely grated Parmesan, salt and pepper to taste.
