- Medium size mackerel fillets, deboned and skin on - 4 - none
- Caribbean jerk seasoning mix - 3 tbsp - none
- Ripe mango - 1 - cubed
- Avocado - 1 - cubed
- Small red onion - 1 - finely chopped
- Jalapeño - half - deseeded and minced
- Lime juice - from 2 limes - none
- Fresh coriander - a handful - chopped
- Black pepper - for seasoning - none
- Sea salt - for seasoning - none
- Olive oil - 2 tbsp - none
Preparation

Step 1 - 🐟✨👐Rub the mackerel fillets with the Caribbean Jerk seasoning mix gently.

Step 2 - 🔥🍳🐟Heat the olive oil in a pan over medium heat. Put the fillets skin side down for about 5 minutes until the skin is crisp. Then turn the fillets and cook the other side for another 2-3 minutes until they are cooked through.

Step 3 - 🥭🥑🌶️🍈✨Mix together mango, avocado, red onion, jalapeño, and coriander in a bowl. Add in lime juice, black pepper, and a pinch of sea salt to taste.

Step 4 - 🍽️🐟🎉Divide the salsa among four plates, place a mackerel fillet on top of each, and serve.
