This vibrant recipe captures the flavors of the Caribbean, using fresh, succulent shrimp and a medley of colorful vegetables. Shrimp is not only delicious but makes a healthier protein choice as well. Our secret ingredient is a homemade Caribbean-style sauce, which adds a tangy, sweet, and slightly spicy edge to this exquisite dish.
Ingredients (for 2)
- Large shrimp - 12 - peeled and deveined
- Red bell pepper - 1 - diced
- Orange bell pepper - 1 - diced
- Sweet potatoes - 2 - peeled and diced
- Red onion - 1/2 cup - finely chopped
- Garlic cloves - 2 - minced
- Fresh cilantro - 2 tbsp - chopped
- Avocado - 1 - diced
- Olive oil - 2 tbsp
- Lime - 1 - juice and zest
- Ripe avocado, greek yogurt, half a lime, salt - 1 avocado, 1/4 cup yogurt, juice of 1/2 lime, to taste
- Fresh cilantro, balsamic reduction -
Preparation

Step 1 - 🍤🔥🍳Heat 1 tbsp of olive oil in a large skillet on medium heat, then cook the shrimp for 2 minutes on each side until light gold. Remove and set aside.

Step 2 - 🥕🔪🍳Add the remaining olive oil to the skillet and stir in sweet potatoes. Cook until tender, then add bell peppers and onions, and cook until they're softened.

Step 3 - 🍤🌶🍳Stir in garlic, cooked shrimp, cilantro, and lime juice. Cook until the shrimp are reheated, and veggies are tender.

Step 4 - 🥑🥣🌀Combine avocado, Greek yogurt, lime juice, and salt in a food processor. Blend until smooth.

Step 5 - 🍽🥑🌿Serve the hash topped with avocado cream, and garnish it with cilantro, diced avocado, and a drizzle of balsamic reduction.

Fun fact: Did you know the avocado is actually a fruit, not a vegetable? Its creamy texture and mild flavor make it a perfect ingredient for our avocado cream. Also, you can add a bit of heat to this dish by incorporating some sliced jalapeno peppers, or for extra crispiness, you could roast the sweet potatoes in the oven before adding them to the hash.
