
Cauliflower Tsuno-miyaki

Ingredients (for 4)
- Large cauliflower head - 1 - crumbled
- Spring onions - 4 - finely chopped
- Ginger - 1 tablespoon - grated
- Garlic cloves - 2 - minced
- Eggs - 4 - beaten
- Rice flour - 1 cup - none
- Okonomiyaki sauce - 1/4 cup - none
- Pickled ginger - for garnish - none
- Japanese mayonnaise - for garnish - none
- Bonito flakes - for garnish - none
- Salt - to taste - none
- Pepper - to taste - none
- Vegetable oil - 2 tablespoons - none
Preparation

Step 1 - 🥣🥦🥚In a large bowl, combine cauliflower, spring onions, ginger, garlic, beaten eggs and rice flour. Blend until all ingredients are well combined.

Step 2 - 👐🍽️🥞Divide the mixture into four equal parts and mould them into the shape of pancakes.

Step 3 - 🔥🍳🥞Heat vegetable oil in a non-stick pan. Cook these pancakes over medium heat for about 5 minutes on each side, until they turn golden brown.

Step 4 - 🍽️🍣🍵Garnish each pancake with Okonomiyaki sauce, Japanese mayonnaise, pickled ginger, bonito flakes and extra spring onions. Serve your Cauliflower Tsuno-miyaki hot with a cup of green tea.
