Celery Ratatouille Tartine

Ingredients (for 2)
- Celery stalks - 2 - thinly sliced
- Medium zucchini - 1 - cubed
- Multicolor bell peppers - 1 cup - cubed
- Small eggplant - 1 - cubed
- Small red onion - 1 - chopped
- Garlic cloves - 2 - minced
- Cherry tomatoes - 1 cup - halved
- Fresh parsley - a handful - chopped
- Multigrain bread - 4 slices - none
- Olive oil - 4 tbsp - none
- Salt - to taste - none
- Pepper - to taste - none
Preparation

Step 1 - 🥘🔥💧Heat 2 tbsp of olive oil in a large pan over medium heat.
