A little about this dish

Ingredients (for 2)

  • Red and green grapes1 cuphalved
  • Ripe tomato1diced
  • Red onion1/2finely chopped

  • Lime1zested and juiced
  • Fresh linguini200 grams
  • Garlic4 clovesminced
  • Red chili flakes1 tsp
  • Olive oil2 tbsp
  • Parmesan1/2 cupgrated

Preparation

  1. Step 1 — 🍅🍇🥣
    Mix halved grapes, diced tomato, chopped red onion, chopped cilantro, lime zest, and half of the lime juice in a bowl. Season it with salt.

    Cook the linguini as per instructions on the package until al dente. Drain it but keep some pasta water on the side.
  3. Step 3 — 🧄🌶️🍳
    In a pan, heat 1 tbsp olive oil. Add minced garlic and chili flakes and cook until they release their aroma.

    Add the cooked linguini into the pan with the garlic and chili oil. Add a bit of pasta water if it's too dry.

    Squeeze the rest of lime juice onto the pasta, then sprinkle half of the grated Parmesan. Mix them together.

    Serve the linguini on plates, topped with grape salsa fresca, remaining Parmesan, and additional chopped cilantro.
