Today, we're fusing two beloved cuisines - Italian and Mexican - into an exciting and unique dish. Our star ingredient, Grapes, will lend a sweet and tangy touch to our pasta dish, balanced perfectly by the piquant Mexican-inspired flavors.
Ingredients (for 2)
- Red and green grapes - 1 cup - halved
- Ripe tomato - 1 - diced
- Red onion - 1/2 - finely chopped
- Cilantro - A handful - chopped
- Lime - 1 - zested and juiced
- Fresh linguini - 200 grams
- Garlic - 4 cloves - minced
- Red chili flakes - 1 tsp
- Olive oil - 2 tbsp
- Parmesan - 1/2 cup - grated
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - 🍅🍇🥣Mix halved grapes, diced tomato, chopped red onion, chopped cilantro, lime zest, and half of the lime juice in a bowl. Season it with salt.

Step 2 - 🍝💦🥘Cook the linguini as per instructions on the package until al dente. Drain it but keep some pasta water on the side.

Step 3 - 🧄🌶️🍳In a pan, heat 1 tbsp olive oil. Add minced garlic and chili flakes and cook until they release their aroma.

Step 4 - 🍝🌶️🧄Add the cooked linguini into the pan with the garlic and chili oil. Add a bit of pasta water if it's too dry.

Step 5 - 🍋🧀🍽️Squeeze the rest of lime juice onto the pasta, then sprinkle half of the grated Parmesan. Mix them together.

Step 6 - 🍝🥗🍽️Serve the linguini on plates, topped with grape salsa fresca, remaining Parmesan, and additional chopped cilantro.
