A little about this dish
This recipe gives classic French soup a vibrant twist by highlighting the fresh flavor of chives. It's our reinvented Chive Vichyssoise, a cold, creamy soup that's surprisingly refreshing and perfect for a moderate, sunny day.
Ingredients (for 2)
- Chives — 1 bunch — finely chopped
- Potatoes — 2 medium — peeled and diced
- Leeks — 2 — white part only, sliced
- Vegetable broth — 4 cups
- Heavy cream — 1/2 cup
- Butter — 2 tbsp
- Salt — to taste
- Black pepper — to taste
Preparation

Step 1 — 🧈🍳🍃Melt 2 tbsp of butter in a saucepan over medium heat. Add finely sliced white parts of 2 leeks. Cook until they soften.

Step 2 — 🥔🍳⏲️Add 2 medium peeled and diced potatoes to the saucepan. Sauté for 5 minutes so they start to soften but not brown.

Step 3 — 🍲🔥🍵Pour 4 cups of vegetable broth into the saucepan and bring it to a boil. Reduce heat and let it simmer until the potatoes are tender.

Step 4 — 🌿🌪️❄️Blend the soup with half of the finely chopped chives until smooth. Chill the mixture in the refrigerator for at least 2 hours to allow flavors to blend.

Step 5 — 🥛🧂🍲Before serving, stir in 1/2 cup of heavy cream, the remaining finely chopped chives, salt, and pepper to taste. Garnish each serving with a drizzle of cream and some crispy chives.
A final fox tip
This soup is a spin-off of the ever-classic French Vichyssoise soup but with the added vibrancy of chives. For a vegan version, use coconut cream in place of dairy. It's also kid-friendly; ask them help to prepare the chives.
