It's time to celebrate Cinco de Mayo with a vibrant and iconic dish that is sure to impress. This recipe focuses on creating a layered and visually stunning presentation of the classic Mexican dish - Tacos.
Ingredients (for 4)
- Tortilla chips - 1 bag
- Black beans - 1 can - drained and rinsed
- Ground beef or tofu - 1/2 lb
- Chili powder - 1 tbsp
- Ground cumin - 1 tsp
- Paprika - 1 tsp
- Garlic powder - 1/2 tsp
- Onion powder - 1/2 tsp
- Salt - To taste
- Pepper - To taste
- Ripe avocado - 1 - mashed
- Lime - 1 - juiced
- Red onion - 1/4 cup - finely chopped
- Garlic powder - 1/4 tsp
- Salt - 1/4 tsp
- Cilantro leaves - 1/4 cup - chopped fresh
- Jalapeno - 1 small - seeded and finely chopped
- Diced tomatoes - 1 cup
- Shredded cheddar or mexican blend cheese - 1 cup
- Salt - To taste
- Sour cream - - for serving
- Hot sauce - - for serving
- Vegetable oil - 1 tbsp
Preparation

Step 1 - 🔥💻🍳Preheat a skillet over high heat.

Step 2 - 🍖🍜👨🍳Add oil and ground beef or tofu, and cook until browned, about 5 minutes. Season with chili powder, cumin, paprika, garlic powder, onion powder, and salt and pepper to taste.

Step 3 - 🥑🥄🍋In a separate bowl, mix together mashed avocado, lime juice, red onion, garlic powder, salt, and cilantro to make guacamole.

Step 4 - 🍅🌶️🧂In another bowl add diced jalapeno, tomatoes, salt, and cilantro, to make salsa.

Step 5 - 🍴🔪🧀To assemble, spread a layer of tortilla chips on the bottom of a large serving dish. Add a layer of black beans, then a layer of meat or tofu mixture. Spread guacamole on top followed by salsa and shredded cheese. Top it off with diced tomatoes, jalapenos, and a sprinkle of cilantro. Repeat the layers until you've used all of the ingredients, ending with a layer of shredded cheese on top.

Additional
For a vegetarian option, simply substitute ground beef with crumbled tofu. To add even more color, you can also add shredded purple cabbage, sliced radishes or corn kernels. This dish is also perfect for anyone looking to eat gluten-free.
