
Cod and Cornmeal Pancake Stack

Ingredients (for 4)
- Fresh cod fillets - 4-6 ounces each - 4 pieces
- Cornmeal - 2 cups
- All-purpose flour - 1/2 cup
- Baking powder - 1 tablespoon
- Large eggs - 2
- Milk - 1 1/2 cups
- Oil - 4 tablespoons
- Salt - 1 teaspoon
- Freshly ground black pepper - 1/2 teaspoon
- Maple syrup - 1/2 cup
- Lemon juice - 2 tablespoons
- Fresh arugula - 2 cups
- Extra-virgin olive oil - 2 tablespoons
- Salt and freshly ground black pepper - to taste

Step 1 - πΎπ₯£π₯In a medium bowl, whisk together cornmeal, flour, baking powder, salt, and pepper.

Step 2 - π₯π₯πWhisk together eggs and milk in another bowl. Gradually add this to the cornmeal mixture, stirring until combined.

Step 3 - π³π₯πHeat 1 tablespoon of oil in a large non-stick skillet over medium heat. Pour 1/4 cup of the batter for each pancake. Cook until the edges are dry, then flip and cook until golden.

Step 4 - ππ§π΄Heat the remaining oil in another skillet over medium-high heat. Season the cod fillets with salt and pepper. Cook for 4-5 minutes each side or until the fish flakes easily with a fork.

Step 5 - πππ―Combine maple syrup and lemon juice in a small saucepan. Bring to a simmer, stirring constantly until combined.

Step 6 - π₯ππ₯Place pancakes on a plate, top each with a cod fillet, pour over some of the maple lemon glaze. Serve with a side of fresh arugula drizzled with olive oil and seasoned with salt and pepper.
