With crisp spring air and fresh crab being the highlight, this dish is a sophisticated and visually stunning spin on the traditional American crab cake. Aromatic herbs and colorful vegetables envelop the crab, providing a vibrant and delicious contrast.
Ingredients (for 4)
- Lump crab meat - 1 lb - fresh
- Colorful bell peppers - 2 - cut into halves, seeds removed
- Celery - 2 stalks - finely chopped
- Onion - 1/2 - finely chopped
- Garlic clove - 1 - minced
- Grated parmesan - 1/2 cup
- Fresh parsley - 2 tablespoons - finely chopped
- Fresh thyme - 1 tablespoon - finely chopped
- Mayonnaise - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Lemon zest - 1 tablespoon
- Large egg - 1
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste

Step 1 - πΆοΈπͺπ₯Preheat your oven to 375Β°F (190Β°C). Cut the bell peppers into halves, removing the seeds, drizzle with oil and place them with the cut-side down on a baking tray.

Step 2 - πΆοΈπ₯β°Roast the prepared bell peppers in the preheated oven for 15 minutes.

Step 3 - π¦π§πΏπ₯π§π₯£In a large bowl, mix together the crab meat, chopped celery, chopped onion, minced garlic, half of the Parmesan, chopped parsley, thyme, mayonnaise, Dijon mustard, lemon zest, egg, black pepper, and salt.

Step 4 - πΆοΈπ¦π₯After roasting, remove the bell peppers from the oven, flip them over, and fill each pepper half with the crab mixture.
