Ingredients (for 4)
- Sunchoke - 1.10 lbs - washed and cut into 1 inch cubes
- Boneless chicken breast - 1.10 lbs - cut into cubes
- Fresh ginger - 2 tablespoons - grated
- Garlic clove - 1 clove - minced
- Carrots - 2 carrots - julienned
- Peas - 1 cup
- Soy sauce - 1/4 cup
- Oyster sauce - 2 tablespoons
- Chicken broth - 1/2 cup
- White rice - 2 cups
- Sesame oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - - for garnish
Preparation

Step 1 - ππ₯πAccording to the package instructions, cook the white rice and keep it warm.

Step 2 - π°π³πHeat half of the sesame oil in a large wok or skillet. Add the sunchokes and cook until golden brown and soft in the center. Set aside.

Step 3 - ππ³πIn the same wok, add the remaining sesame oil and chicken. Stir-fry until browned and completely cooked.

Step 4 - π₯π²πAdd the ginger, garlic, carrots, and peas into the wok. Stir-fry until the vegetables turn to be tender-crisp.

Step 5 - πΆοΈπ₯£π₯Pour in the soy sauce, oyster sauce, and chicken broth, stirring well to combine. Bring everything to simmer, then let it cook for 2 more minutes.

Step 6 - π°π²πTime to add the cooked sunchokes back into the wok. Toss them well to get coated in the tasty sauce.

Step 7 - π₯£πΏπ½Place the stir-fried mix over the white rice that we prepared earlier. Garnish everything with fresh cilantro and enjoy while it's hot!
Additional
Microgreen garnishes like radish or sunflower would add a beautiful pop of color and some extra nutrients if desired. Children can help set the table or garnish the finished plates with cilantro. Fun Fact: Despite its name, Sunchokes are actually a type of tuber and not related to artichokes! They are also known as 'Jerusalem artichokes'.
