In the spirit of summer, we bring to you a refreshing cucumber snack, unlike any other! Cucumbers are not only a cool antidote to the heat, but they are also rich in nutrients, including vitamin K, hydration, and dietary fiber. This dish, while a bit unexpected, is a delightful spin-off of classic American bruschetta, proving that cucumbers can be more than just salad material.
Ingredients (for 4)
- Large cucumbers - 2 - peeled and sliced into thin strips
- Small loaf of sourdough bread - 1 - thinly sliced
- Feta cheese - 1 cup - crumbled
- Cherry tomatoes - 1 cup - halved
- Fresh dill - 1β4 cup - chopped
- Honey - 2 tablespoon
- Olive oil - 2 tablespoon
- Salt and black pepper - to taste

Step 1 - π₯ππ«Preheat your oven to 350Β°F (180Β°C). Take your thinly sliced sourdough bread and arrange them on a baking sheet. Brush one side of each slice with olive oil.

Step 2 - β²οΈππPut the baking sheet in the pre-heated oven and bake the bread slices for 10-12 minutes, or until they are golden and crispy. After baking, remove the bread slices from the oven and let them cool.

Step 3 - π₯π πΏπ§While the bread slices are baking, you can prepare the cucumber topping. In a bowl, combine the thinly sliced cucumbers, halved cherry tomatoes, freshly chopped dill and crumbled feta cheese. Stir them together to mix.

Step 4 - π§π―π₯π₯£Season the cucumber topping with salt, black pepper, and a drizzle of honey, then stir gently. Make sure not to break the cucumber slices.

Step 5 - ππ₯π½οΈOnce the bruschetta bread has cooled, set a tablespoon of the cucumber topping on each slice. Arrange your finished bruschetta on a serving plate and they're ready to serve immediately.
Additional
Let the kids help with assembling the bruschetta, they will love it! To kick things up a notch, add a teaspoon of finely chopped jalapeno to the cucumber mix for a hint of heat. You can also swap honey for balsamic reduction if preferred.
