Ingredients (for 2)
- Large poblano peppers - 2 - deseeded and chopped
- Corn tortillas - 2
- Red bell pepper - 1 - diced
- Sweet corn - 1/2 cup - cooked
- Almond feta cheese - 1/2 cup - crumbled
- Olive oil - 1 tablespoon
- Salt and pepper - to taste

- Lime - 2 - wedges
