Fiery Thai Escarole Salad

Embracing Thai flavors matched with the bitter richness of Escarole, this salad dish offers a refreshing and fiery experience. Escarole, a less common salad green, is balanced with a spicy and tangy Thai-inspired dressing, incorporating warmth in a dish perfect for colder seasons.
Ingredients (for 2)
- Escarole - 2 cups - chopped
- Rice pearls - 1 cup - cooked
- Pomegranate seeds - 1/2 cup
- Red chili - 1 - thinly sliced
- Garlic - 1 clove - minced
- Soy sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Maple syrup - 1 tablespoon
- Sesame oil - 1 tablespoon
- Black sesame seeds - for garnishing
- Salt - to taste
- Pepper - to taste
Preparation

Step 1 - 🥣🥢✨Mix soy sauce, lime juice, maple syrup and sesame oil in a bowl. Set it aside.

Step 2 - 🥬🍚🌶️In a large bowl, place the chopped escarole, cooked rice pearls, sliced red chili, minced garlic, salt and pepper.

Step 3 - 🥗🥣💦Pour the prepared dressing over the salad and mix until everything is nicely coated.

Step 4 - 🥗🍎🌑Sprinkle the salad with pomegranate seeds and black sesame seeds for garnish.
Additional
For an extra crunch, consider adding toasted cashews or peanuts. If you're not vegan, grilled shrimp or chicken would pair well with this salad. Kids can help in rinsing the escarole and deseeding the pomegranate. The dressing's spiciness can be adjusted to make it more kid-friendly.
