
Garlic Infused Caribbean Glory Salad

This captivating salad reinvents traditional Caribbean flavors using garlic as a star ingredient. The garlic partners seamlessly with avocado, ripe mangoes and charred corn, resulting in a soothing, yet invigorating dish.
Ingredients (for 4)
- Cloves of garlic - 4 - minced
- Ripe mangoes - 2 - diced
- Avocados - 2 - diced
- Ears of corn - 2 - husks removed
- Bunch of fresh lettuce mix - 1 - washed and dried, roughly torn (keep the purple and green ones separate)
- Pomegranate seeds - 1/2 cup
- Lemon - 1 - worth of zest and juice
- Orange - 1 - juiced
- Olive oil - 1/4 cup
- Salt and pepper - to taste

Step 1 - 🌽🔥✂️Heat the grill to high. Grill corn, turning occasionally, until it is charred on all sides. Set aside until it is cool enough to handle, then cut off the kernels.

Step 2 - 🥘🔥🧄On low heat in a pan, cook the minced garlic with a pinch of salt until it becomes fragrant and soft. Set it aside to cool.

Step 3 - 🍋🍊🧄🥣Combine the lemon zest, lemon juice, orange juice, cooked garlic, and olive oil in a jar. Season with salt and pepper. Shake until well combined.

Step 4 - 🥗🥑🥭In a large salad bowl, put the lettuce (purple and green), grilled corn kernels, diced mangoes, diced avocados, and pomegranate seeds. Drizzle the garlic-infused citrus dressing over it.

Step 5 - 🥄🥗🍽️Toss the salad gently until everything is well combined. Serve immediately, or refrigerate for an hour before serving to let the flavors meld together.

You can play around with this dish, consider adding some grilled shrimps or tofu for a protein punch.
