Ingredients (for 4)
- Whole mackerel - 4 - cleaned and filleted
- Ears of corn - 4 - kernels removed
- Cherry tomatoes - 2 cups - halved
- Red onion - 1 - finely chopped
- Jalapeno - 1 - finely chopped
- Micro-greens - 1 cup - for garnish
- Lime - 1 - juice and zest
- Lemon - 1 - juice and zest
- Juzu (japanese citrus), infused olive oil - 2 tbsp
- Salt - to taste
- Black pepper - to taste
- Extra virgin olive oil - for cooking

Step 1 - 🔥🔝⏲️Preheat the grill at medium-high heat.

Step 2 - 🐟🍋🔥Season the mackerel fillets with salt and pepper, drizzle with lemon juice, then grill them with the skin-side down first for about 4 minutes on each side, or until the fish is opaque and flakes easily.

Step 3 - 🌽🧅🌶️While the mackerel is cooking, in a bowl, mix corn kernels with half of the chopped red onion, jalapeno, lime juice, salt, and pepper.

Step 4 - 🍅🧅🥣In another bowl, combine cherry tomatoes, the rest of the onion with the juzu infused olive oil, salt and pepper.

Step 5 - 🐟🥗🍽️Place a grilled mackerel fillet in the center of your dish. Surround it by spooning the corn salsa on one side and the cherry tomato relish on the other. Finish by garnishing with micro-greens and a drizzle of juzu infused olive oil.
