    Preheat the grill at medium-high heat.
  2. Step 2 - 🐟🍋🔥
    Season the mackerel fillets with salt and pepper, drizzle with lemon juice, then grill them with the skin-side down first for about 4 minutes on each side, or until the fish is opaque and flakes easily.
  3. Step 3 - 🌽🧅🌶️
    While the mackerel is cooking, in a bowl, mix corn kernels with half of the chopped red onion, jalapeno, lime juice, salt, and pepper.
  4. Step 4 - 🍅🧅🥣
    In another bowl, combine cherry tomatoes, the rest of the onion with the juzu infused olive oil, salt and pepper.
