This unique recipe is an exciting twist on traditional Korean barbeque and features the sweetness of ripe pears as a standout ingredient. Packed full with diverse flavors, it offers a delicate balance between sweet, savory, and smoky notes.
Ingredients (for 2)
- Large pork chops - 2
- Large asian pear - 1 - thinly sliced
- Red bell pepper - one half - thinly sliced
- Asian chili powder - 1 tablespoon
- Ginger - 2 teaspoons - grated
- Garlic - 3 cloves - minced
- Salt - 1/2 tsp
- Asian pear - 1/2 - grated
- Soy sauce - 1/4 cup
- Brown sugar - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 1 clove - minced
- Medium sweet potatoes - 2
- Cream - 1/4 cup
- Salt and pepper - to taste
- Black sesame seeds -
- Fresh cilantro - - finely chopped
Preparation

Step 1 - 🍐🌶️🥣In a bowl, combine pear, bell pepper, chili powder, ginger, garlic, and salt. Set aside to marinate for about 30 minutes.

Step 2 - 🍐🥘🔥In a saucepan, combine the grated pear, soy sauce, brown sugar, rice vinegar, sesame oil, and garlic. Simmer on low heat until the sauce slightly thickens.

Step 3 - 🔥🐖🍽️Preheat your grill over medium heat. Season the pork chops with salt and pepper and grill for about 7 minutes per side or until cooked to your desired doneness. In the last few minutes of grilling, generously brush each side with the barbeque sauce.

Step 4 - 🍠🥣🧂Boil the sweet potatoes until soft, drain, and mash with cream, salt, and pepper.

Step 5 - 🍠🍽️🌿Place a dollop of sweet potato mash on the plate, top with a grilled pork chop, spoon a generous amount of pear kimchi, and drizzle with the remaining barbeque sauce. Sprinkle with sesame seeds and fresh cilantro.
Additional
For a less spicy version, you can reduce the amount of chili powder in the kimchi. Kids can join in by helping to mash the sweet potatoes!
