This Grilled Cheese Sandwich recipe puts a twist on the classic by using a combination of Havarti and Gouda cheeses along with a homemade raspberry compote for an unexpected burst of flavor. Ingredients (for 2)
- Sourdough bread - 4 slices
- Havarti cheese - 4 slices
- Gouda cheese - 4 slices
- Raspberries - 3/4 cup
- Sugar - 1 1/2 tablespoon
- Lemon juice - 1/2 tablespoon
- Butter - 3 tablespoons
- Heavy cream - 1/4 cup
- Crushed tomatoes - 1 (14 ounces) can
- Garlic powder - 1/2 teaspoon
- Dried basil - 1/2 teaspoon

Preparation

Step 1 - 🍓🍋🍯Combine raspberries, sugar, and lemon juice in a small saucepan and cook until the raspberries have completely broken down and the sauce has thickened. Let cool.

Step 2 - 🍅🥄🍶Pour crushed tomatoes into a pot over medium heat. Stir in garlic powder, dried basil, salt, and pepper and let cook. Stir in heavy cream and let simmer. Let cool.

Step 3 - 🔥🍳Preheat skillet over medium heat.

Step 4 - 🧈🍞Butter one side of each slice of bread.

Step 5 - 🍞🧀🍓Place 2 slices of Havarti cheese on each unbuttered side of two slices of bread. Top each with a slice of Gouda cheese. Spread 1 tablespoon of raspberry compote on the Gouda cheese. Place remaining slices of bread on top, butter-side up.

Step 6 - 🥪🍳🧀Grill sandwiches until golden brown and cheese has melted on each side.

Additional
For an extra crunch, add some cooked bacon or prosciutto to the grilled cheese. Kids can help by stirring the raspberry compote or helping to butter the bread slices.
