Inspired by Indian cuisine, this savory brunch dish masterfully blends earthy Shiitake mushrooms with a hint of seasonal warming spices - a perfect comfort food for a chilled morning. The Shiitake mushrooms not only provide umami depth but are also a great source of vitamins and minerals.
Ingredients (for 4)
- Shiitake mushrooms - 200g - thinly sliced
- Red bell pepper - 1 medium - diced
- Fresh spinach - 2 cups - cleaned and torn
- Large eggs - 8 - beaten
- Feta cheese - 100 g - crumbled
- Whole cumin seeds - 1.5 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Fresh cilantro - handful - chopped
- Olive oil - 2 tablespoon
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - π₯π³π°Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the cumin seeds and toast until they start to splutter.

Step 2 - ππΆοΈπ₯Add the thinly sliced shiitake mushrooms and diced red bell peppers to the skillet. Stir-fry until tender and slightly caramelized.

Step 3 - π₯¬π₯πStir in 2 cups of cleaned and torn fresh spinach and cook until wilted.

Step 4 - π₯π₯£πΆοΈIn a large bowl, whisk together 8 beaten large eggs, 1/2 teaspoon turmeric, 1 teaspoon chili powder, and add salt and pepper to taste.

Step 5 - π³π₯π§Reheat the same skillet with the remaining olive oil. Pour the egg mixture over the veggies in the pan. Cook over medium heat without stirring till the edges start to set. Sprinkle the top with 100g crumbled feta cheese.

Step 7 - πΏππ³Top the frittata with a handful of chopped fresh cilantro before serving.
