Ingredients (for 4)
- Unbleached all-purpose flour - 1 cup - sifted
- Cage-free eggs - 2 - large
- Whole milk - 1 1/2 cups
- Granulated sugar - 1 tbsp for batter, additional 2 tbsp for berry compote
- Unsalted butter - 3 tbsp - melted + additional for pan
- Pure vanilla extract - 1 tsp
- Mixed fresh berries - 2 cups - (such as blueberries, raspberries, and chopped strawberries)
- Fresh lemon juice - 1 tbsp
- Powdered sugar - - for dusting
- Fresh mint - - for garnish

Step 1 - 🥣🍚🥚In a bowl, combine and blend the flour, eggs, milk, 1 tbsp sugar, melted butter, and vanilla until smooth.

Step 2 - 🍳🥞🔄Heat a lightly buttered non-stick pan over medium-high heat. Pour approximately 1/4 cup of batter into the pan, tilting it to spread the batter evenly. Cook for about 2 minutes until the bottom is light brown, then flip it over to cook the other side. Repeat with remaining batter.

Step 3 - 🍓🍵🔥Combine the mixed berries and remaining sugar in a pot. Stir over medium heat until the sugar dissolves and the berries release their juices. Let it cook until it thickens slightly, then remove from the heat and stir in the lemon juice.

Step 4 - 🥞🍓🌿Serve your crêpes stack-styled, meaning one on top of the other. Drizzle with the warm berry compote, dust with powdered sugar, and garnish with a fresh sprig of mint to finish.
