Ingredients (for 4)
- Freshly chopped lemon thyme - 2 tbsp - chopped
- Ripe tomatoes - 4 medium size
- Quinoa - 1 cup
- Vegetable broth - 2 cups
- Garlic cloves - 2 cloves - minced
- Gruyère cheese - 1/2 cup - grated
- Extra virgin olive oil - 2 tbsp
- Salt - to taste
- Freshly ground black pepper - to taste
Preparation

Step 1 - 🌡️🔥🕗Preheat your oven to 375°F (190°C).

Step 2 - 🍅🥄🥣Scoop out the insides of the tomatoes and set aside the emptied shells. Save the insides for the Quinoa mix.

Step 3 - 🥘🔥🧄In a medium saucepan, heat the olive oil over medium heat and add the minced garlic until fragrant.

Step 4 - 🍚🥣🍲Add quinoa to the saucepan and toast till it's golden. Add the vegetable broth, tomato insides, and half of the chopped lemon thyme. Season with salt and pepper. Bring to boil. Let it simmer covered until the liquid is absorbed, around 15 minutes. Let it stand covered for an additional 5 minutes after turning off the heat.

Step 5 - 🍅🥘🧀Place the tomato shells in a baking dish. Fill each with the cooked quinoa mixture and top with grated Gruyère cheese.

Step 6 - 🔥🍽️⏰Bake in the preheated oven for 10-12 minutes, or until cheese is melted and slightly golden.

Step 7 - 🌿🍅🍽️Garnish with the remaining fresh lemon thyme before serving.
