This unique American-inspired soup makes a hero out of seasonal greens and embraces the peppery spark of arugula. This recipe takes a classic chicken soup and adds a twist with vibrant arugula and a hint of lemon for freshness.
Ingredients (for 2)
- Fresh arugula - 2 cups
- Large chicken breast - 1 large
- Chicken broth - 4 cups
- Small onion - 1 small - diced
- Garlic - 2 cloves - minced
- Large carrot - 1 large - sliced
- Lemon - half - thinly sliced
- Dill - 1 tablespoon - chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
