Ingredients (for 2)
- Linguine - 8 oz
- Asparagus - 1/2 lb - ends trimmed and cut into 2 inch pieces
- Fresh lemon juice - 1/4 cup
- Olive oil - 1/4 cup
- Lemon zest - 1/2 tsp
- Grated parmesan cheese - 1/4 cup
- Kosher salt -
- Freshly ground black pepper -
- Fresh parsley - - for garnish
- Extra parmesan - - for garnish

Step 1 - 🍝💦🔥Bring a large pot of salted water to a boil. Add linguine and cook until al dente, according to package directions. Reserve 1 cup of pasta water, then drain the linguine.

Step 2 - 🥘🌱🔥Meanwhile, heat a large skillet over medium-high heat. Add olive oil and asparagus and season with salt and pepper. Cook, stirring occasionally, until the asparagus is tender-crisp, about 5-7 minutes.

Step 3 - 🍋🍝🌱Add the lemon juice and zest to the skillet and stir to combine. Add the cooked linguine to the skillet and toss to combine. If needed, add reserved pasta water to loosen the sauce.

Step 4 - 🍝🧀🌿Divide the linguine between two plates. Top with grated parmesan cheese and fresh parsley. Serve immediately with extra parmesan cheese, if desired.
