- Live lobsters - 2 (about 1.5 pounds each) - boiled, cleaned and meat chopped
- Small corn tortillas - 8 - warmed
- Olive oil - 2 tablespoons
- Fresh corn kernels - 1 cup
- Medium red bell pepper - 1 - diced
- Small red onion - 1/2 - diced
- Fresh cilantro - A handful - chopped
- Lime - 1 - juiced
- Salt and pepper - to taste
- Ripe avocados - 2 - peeled and pitted
- Jalapeno - 1 - seeds removed (optional)
- Freshly squeezed lime juice - 2 tablespoons
- Fresh cilantro - 1/4 cup - chopped
- Sour cream - 1/4 cup
- Salt - to taste

Step 1 - 🌽🥣🌿In a bowl, combine corn, red bell pepper, red onion, chopped cilantro, lime juice, then season with salt and pepper. Stir the mixture and set aside.

Step 2 - 🥑🌶️🥛In a blender, combine peeled and pitted avocados, jalapeno (optional), freshly squeezed lime juice, chopped cilantro and sour cream. Add some salt and blend until you get a smooth mixture.

Step 3 - 🦞🍳🔥Heat olive oil in a pan over medium heat. Add the chopped lobster meat and saute it for about 5 minutes until it's warm.

Step 4 - 🌮🦞🥑On each warmed tortilla, place a spoonful of lobster meat, top it with a generous serving of corn salsa, and drizzle with zesty avocado crema. Repeat this step until all tortillas and fillings are used up.
