This is a low-carb twist on the classic American comfort food, meatloaf. The star ingredient is lean ground turkey seasoned with cumin, paprika and a touch of maple syrup. It's hearty and satisfying, perfect for a chilly day but light enough for a mild winter day like today. We'll pair it with a refreshing kale and roasted red pepper salad for some color and crunch.
Ingredients (for 4)
- Ground turkey - 1.5 lb.
- Almond flour - 1/2 cup
- Egg - 1
- Medium onion - 1/2 - finely chopped
- Garlic cloves - 2 - minced
- Cumin - 1 tsp.
- Smoked paprika - 1 tsp.
- Maple syrup - 1 tbsp.
- Salt - 1 tsp.
- Black pepper - 1/4 tsp.
- Kale - 4 cups - leaves stripped from stem, roughly chopped
- Roasted red peppers - 1 cup - sliced into thin strips
- Shallot - 1 - thinly sliced
- Olive oil - 1 tbsp.
- Red wine vinegar - 2 tbsp.
- Dijon mustard - 1/2 tsp.
- Salt - 1/4 tsp.
- Black pepper - 1/4 tsp.
- Pecorino romano cheese - 1/4 cup - shaved, optional
Preparation

Step 1 - 🌡️🔥👨🍳Preheat the oven to 375°F.

Step 2 - 🥣🥄🍴In a large mixing bowl, combine the ground turkey, almond flour, egg, onion, garlic, cumin, smoked paprika, maple syrup, salt and pepper. Mix until everything is well combined.

Step 3 - 🗒️🍞🔲Line a loaf pan with baking paper and transfer the meat mixture to the pan. Pat it down into an even layer.

Step 4 - 👨🍳🍞🕒Bake the meatloaf in the preheated oven for 45-50 minutes or until the internal temperature reaches 165°F.

Step 5 - 🥗🍴🥬While the meatloaf is baking, make the salad. In a large bowl, whisk together olive oil, vinegar, Dijon mustard, salt and pepper. Add the chopped kale, shallot, and roasted red peppers. Toss to coat well.

Step 6 - 🔥🥩🍴Remove the meatloaf from the oven and let it rest for 5 minutes. Slice and serve along with the kale and roasted red pepper salad. If desired, sprinkle some shaved Pecorino Romano cheese on top of the salad.
Additional
For a spicier twist, consider adding a 1/4 tsp. of chili powder to the turkey meat mixture. This dish is also delicious served cold the next day for lunch!
