Ingredients (for 2)
- Boneless, skinless chicken breasts - 2 - cut into cubes
- Zucchini - 2 - sliced
- Yellow bell pepper - 1 - sliced
- Garlic cloves - 3 - minced
- Can chopped tomatoes - 1
- Red chilli flakes - 1/2 tsp
- Olive oil - 2 tbsp
- Salt - 1/2 tsp
- Freshly ground black pepper - 1/4 tsp
- Parmesan - 20 g - grated
- Fresh basil leaves - a few - for garnish

Step 1 - 🔥🍳💧Heat 1 tbsp olive oil in a medium size pot over medium heat

Step 2 - 🍗🔄⏱️Add chicken cubes in a single layer and sear until brown on all sides. Remove and set aside

Step 3 - 🥒🔔🥘In the same pot, add remaining olive oil, zucchini, bell pepper, and garlic. Stir and cook for 3-5 minutes until slightly softened

Step 4 - 🍅🌶️⏲️Stir in canned tomatoes, chilli flakes, salt, and pepper. Cover, lower the heat to simmer and let cook for about 15-20 minutes

Step 5 - 🍗💦🔥Return cooked chicken to the pot and let simmer for an additional 10-15 minutes, until the stew is well cooked and flavors meld together

Step 6 - 🍛🧀🌿Plate the stew in deep bowls, sprinkle with parmesan, and garnish with fresh basil. Serve hot
