Ingredients (for 2)
- Boneless, skinless chicken breasts — 2 — cut into cubes
- Zucchini — 2 — sliced
- Yellow bell pepper — 1 — sliced
- Garlic cloves — 3 — minced
- Can chopped tomatoes — 1
- Red chilli flakes — 1/2 tsp
- Olive oil — 2 tbsp
- Salt — 1/2 tsp
- Freshly ground black pepper — 1/4 tsp
- Parmesan — 20 g — grated
- Fresh basil leaves — a few — for garnish

Step 3 — 🥒🔔🥘In the same pot, add remaining olive oil, zucchini, bell pepper, and garlic. Stir and cook for 3-5 minutes until slightly softened

Step 4 — 🍅🌶️⏲️Stir in canned tomatoes, chilli flakes, salt, and pepper. Cover, lower the heat to simmer and let cook for about 15-20 minutes
