Here's a refreshingly different take on hearty south Cajun cuisine with a refreshing nod to spring with Mache, also known as lamb's lettuce, serving as the star in a hill of slow-cooked, spice-infused shrimp and hearty sausage, all swimming in a thick, rich, almost creamy broth of white wine and smoked paprika.
Ingredients (for 2)
- Fresh mache - 2 cups - rinsed and dried
- Raw shrimp - 1 lb - deveined and deshelled
- Andouille sausage - 1/2 lb - sliced
- Garlic - 2 cloves - minced
- White wine - 1/2 cup
- Chicken broth - 1 cup
- Smoked paprika - 1 tbsp
- Cajun seasoning - to taste
- Olive oil - 2 tbsp
- Salt and black pepper - to taste
Preparation

Step 1 - π³π₯π«Heat up the olive oil in a large skillet over medium heat.

Step 2 - π³ππ¨βπ³Add the sliced andouille sausage to the skillet, cook until slightly browned, and then set aside.

Step 3 - π€π§πΆοΈIn the same skillet, add shrimp, minced garlic, Cajun seasoning, salt, and black pepper. Cook until the shrimp turns pink.

Step 4 - π₯π·π§½Pour in the white wine into the skillet and stir well, making sure to scrape off the brown bits at the bottom.

Step 5 - π₯£ππ₯Add the chicken broth and smoked paprika to the skillet, reduce the heat to low, and let it simmer until the broth thickens slightly.

Step 6 - π³ππReturn the sausage to the skillet and stir everything well.

Step 7 - π½οΈππ₯To serve the dish, place the Mache (well rinsed and dried) in the centre of each dish. Top it with the shrimp and sausage mixture, letting the broth pool around the base of the Mache.
Additional
This is a wonderful bridge dish between late winter and early spring, with the warmth of the Cajun-spiced broth but the fresh, verdant crunch of Mache. Can't find Andouille sausage? Switch it out with any spicy sausage of your choice. Want a vegetarian version? Try swapping shrimp and sausage with smoked tofu for a similar palate-stimulating experience.
