Mango and Jalapeño Popsicles

Ingredients (for 4)
- Mango - 2 cups - diced
- Jalapeño - 1 medium
- Coconut milk - 1/2 cup
- Maple syrup - 1/4 cup
- Lime - 1 - juiced
- Salt - Pinch

Preparation

Step 1 - 🔥🌶️👨🍳Roast the Jalapeño over a gas flame or in the oven at 400°F for 10 minutes, until charred. Place the roasted Jalapeño in a plastic bag and seal it for 5 minutes. Then, remove the skin and finely chop.

Step 2 - 🍹🧂🌪️In a blender, combine the diced mango, roasted Jalapeño, coconut milk, maple syrup, lime juice, and salt. Blend until smooth.

Step 3 - ❄️🍡🕒Pour the mixture into popsicle molds, filling them 3/4 of the way. Insert popsicle sticks and freeze for at least 4 hours or overnight.

Step 4 - 💦🧊🍡To remove the popsicles from the molds, run the molds under warm water for a few seconds.

Step 5 - 🍡🍴😋Serve the popsicles immediately after removing them from the molds.
Additional
For a sweeter version, use agave or honey instead of maple syrup. You can also add a sprinkle of Tajín or chili powder on top for added spice. Kids can help by blending the ingredients together and pouring the mixture into the molds.
