Hearty and warming, this innovative soup borrows deep flavors from Mexican cuisine with an unexpected twist of using Matsutake mushrooms - a rare and aromatic variety that lends an earthy and spicy quality to our soup. Ingredients (for 4)
- Matsutake mushrooms - 350g - cleaned and cut into bite-sized pieces
- Canned white hominy - 1 can (15oz) - drained and rinsed
- Vegetable broth - 4 cups
- Garlic - 3 cloves - minced
- Yellow onion - 1 large - chopped
- Dried oregano - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
- Serrano pepper - 1 - minced
- Radishes - 4 - thinly sliced for garnish
- Cilantro - handful - chopped for garnish
- Lime - 1 - cut into wedges for serving
- Olive oil - 2 tablespoons
- Salt and pepper - to taste

Step 1 - πͺπ§ πChop and mince your ingredients as specified to have them ready for cooking. Clean and cut the Matsutake mushrooms into bite-sized pieces, mince garlic and Serrano pepper, chop the yellow onion, thinly slice radishes for garnish, chop cilantro for garnish and cut lime into wedges.

Step 2 - π²π₯π§In a large pot over medium heat, add the olive oil. When hot, add the onion, garlic, and Serrano pepper, cooking until softened.

Step 3 - πΏπ₯π₯Stir in the oregano, cumin, coriander, and a pinch of salt and pepper. Cook until aromatic.

Step 4 - ππ³π₯Add in the Matsutake mushrooms, sauteing until they're golden and slightly crispy.
