Ingredients (for 4)
- Fresh tarragon - 2 tablespoons - freshly chopped
- Lamb meat - 800 grams - cut into 1-inch cubes
- Zucchini - 2 - cut into thick rounds
- Red bell peppers - 2 - cored, deseeded and cut into chunks
- Yellow bell peppers - 2 - cored, deseeded and cut into chunks
- Large red onion - 1 large - cut into chunks
- Garlic cloves - 4 cloves - finely chopped
- Pomegranate seeds - 1/4 cup - for garnish
- Olive oil - 6 tablespoons
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - πΏππ§Mix freshly chopped tarragon, finely chopped garlic, olive oil, lemon juice, salt, and pepper in a bowl.

Step 2 - πβ³πMarinate the lamb cubes in half of the tarragon mixture for at least 2 hours, preferably overnight.

Step 3 - π₯πΆοΈπ’Thread the prepared zucchini, red and yellow bell peppers, and red onion chunks onto skewers in an alternating pattern with the marinated lamb.

Step 4 - π₯π’ποΈTurn on the barbecue to medium heat. Grill the skewers on each side for about 5-7 minutes, or until lamb is cooked to your preference, regularly brushing them with the remaining tarragon mixture.
