A little about this dish
Welcome to the sublime fusion of Mediterranean flavors and an all-time favorite barbecue style. Utilizing Tarragon, an underappreciated herb that can add a unique hint of mild aniseed and vanilla to your dishes, we've curated this both aesthetically pleasing and undeniably delicious recipe.
Ingredients (for 4)
- Fresh tarragon — 2 tablespoons — freshly chopped
- Lamb meat — 800 grams — cut into 1-inch cubes
- Zucchini — 2 — cut into thick rounds
- Red bell peppers — 2 — cored, deseeded and cut into chunks
- Yellow bell peppers — 2 — cored, deseeded and cut into chunks
- Large red onion — 1 large — cut into chunks
- Garlic cloves — 4 cloves — finely chopped
- Pomegranate seeds — 1/4 cup — for garnish
- Olive oil — 6 tablespoons
- Lemon juice — 2 tablespoons
- Salt — to taste
- Black pepper — to taste
Preparation
-
Step 1 — 🌿🍋🧂Mix freshly chopped tarragon, finely chopped garlic, olive oil, lemon juice, salt, and pepper in a bowl.
-
Step 2 — 🍖⏳🌚Marinate the lamb cubes in half of the tarragon mixture for at least 2 hours, preferably overnight.
-
Step 3 — 🥒🌶️🍢Thread the prepared zucchini, red and yellow bell peppers, and red onion chunks onto skewers in an alternating pattern with the marinated lamb.
-
Step 4 — 🔥🍢🖌️Turn on the barbecue to medium heat. Grill the skewers on each side for about 5-7 minutes, or until lamb is cooked to your preference, regularly brushing them with the remaining tarragon mixture.
-
Step 5 — 🍢🍽️🌡️Arrange the skewers on a plate, sprinkle with pomegranate seeds, and serve hot.
A final fox tip
Tarragon is a common herb in French cooking and excitingly, it also pairs beautifully with lamb, enhancing its naturally rich flavor. Feel free to replace lamb with another meat or tofu for a vegetarian option. Children can help with threading the skewers, under supervision.
