Ingredients (for 2)

  • Kaleabout 5 stemsfinely chopped
  • Miso paste2 tablespoon
  • Trout fillets2 pieces
  • Sushi rice1 cup
  • Furikake2 teaspoon
  • White sesame seeds1 teaspoon
  • Black sesame seeds1 teaspoon
  • Pickled gingerto garnish
  • Olive oilas needed
  • Sea saltto taste
  • White sugara pinch

Preparation

    Preheat the oven to 400°F (200°C).

    Marinate the trout fillets in 2 tablespoon of miso paste for about 20 minutes.

    Bake the marinated trout fillets in the preheated oven for 15 minutes.

    Cook 1 cup of sushi rice as per instructions on the package.

    In a pan with olive oil, saute about 5 stems of finely chopped kale until wilted, then mix it into the cooked rice.

    Sprinkle 2 teaspoons of furikake, 1 teaspoon each of white and black sesame seeds over the kale-rice mixture, and give a good stir.

    Serve the miso-baked trout over a bed of kale-furikake rice. Garnish with pickled ginger to taste, a pinch of white sugar and salt as needed.
