This recipe draws inspiration from the fresh Mediterranean cuisine. It features seasonal seafood and vegetables and is a fusion of Moroccan and Spanish flavors. The dish is easy to prepare and perfect for a light, healthy dinner in the patio with a glass of white wine.
Ingredients (for 2)
- Medium-sized shrimp - 8 - peeled and deveined
- Mussels - 8 - scrubbed and debearded
- Cleaned squid - 4 oz - bodies and tentacles separated and sliced
- Red onion - 1/2 - sliced
- Garlic cloves - 2 - minced
- Red bell pepper - 1 - sliced
- Zucchini - 1 - sliced
- Canned tomatoes - 1/2 cup - chopped, with their juices
- Vegetable broth - 1/2 cup
- Cumin powder - 1/2 tsp
- Smoked paprika - 1/4 tsp
- Harissa paste - 1/2 tsp
- Olive oil - 2 tbsp
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - - chopped, for garnish
Preparation

Step 1 - π₯π³π₯In a large skillet or Dutch oven, heat the oil over medium-high heat.

Step 2 - π§ π³πAdd the sliced onion and cook for 2-3 minutes until they start to soften.

Step 3 - π§π₯π©βπ³Add the garlic, cumin, paprika, and harissa paste, and cook for 1-2 minutes.

Step 4 - π«π₯π³Add the bell pepper and zucchini and cook for 3-4 minutes until they start to brown.

Step 5 - π π₯£π§Add the canned tomatoes and vegetable broth and season with salt and black pepper to taste. Bring to a boil and then reduce to a simmer. Cook for 10 minutes until the vegetables are tender and the sauce has thickened.

Step 6 - π€π¦ͺπ¦Add the shrimp, mussels, and squid and cook for 5-7 minutes until the seafood is cooked through.

Step 7 - πΏππ΄Garnish with fresh parsley and serve hot with crusty bread to soak up the sauce.
Additional
This dish can be easily customized with other vegetables you may have on hand, such as eggplant or green beans. For a spicier version, you can add more harissa paste or some red pepper flakes. Kids can help with cleaning the seafood and slicing the vegetables.
