This Japanese-inspired Paleo recipe is perfect for a warm day in New York City! Fresh seasonal vegetables, fresh caught salmon and traditional Japanese ingredients make for a healthy and delicious dish.
Ingredients (for 4)
- Wild salmon - 1 lb - skin removed and diced
- Tamari sauce - 1/4 cup
- Sesame oil - 1 tbsp
- Sesame seeds - 2 tbsp - toasted
- Green onions - 2 tbsp - chopped
- Ginger - 1 tbsp - grated
- Garlic - 1 clove - minced
- Cauliflower - 1 small head
- Carrot - 1 large - julienned
- English cucumber - 1 - julienned
- Avocado - 1 ripe - sliced
- Red cabbage - 1/2 cup - shredded
- Pickled ginger - 1/4 cup
- Nori strips - 1/4 cup
- Salt - to taste
- Pepper - to taste
- Olive oil - 1 tbsp
Preparation

Step 1 - 🔥🍳🐟Preheat a non-stick skillet over medium heat, add the diced salmon and slowly cook until the edges are golden brown (about 3-5 minutes).

Step 2 - 🥣🐟🧂Transfer the salmon to a large mixing bowl and add the Tamari sauce, sesame oil, green onions, ginger, garlic and sesame seeds. Mix well to combine and set aside.

Step 3 - 🥦💥🍚In a food processor, pulse the cauliflower until it is the consistency of rice.

Step 4 - 🍳🥦🧂In the same skillet, heat the olive oil over medium-high heat. Add the cauliflower rice, salt and pepper, and cook for 5-7 minutes, or until the cauliflower is slightly golden and tender. Divide into 4 bowls.

Step 5 - 🍴🐟🥦🥕Add the salmon poke mixture on top of the cauliflower rice, then layer on the julienned carrot, cucumber, sliced avocado and shredded cabbage. Top with pickled ginger and nori strips.

To make this recipe even more authentic, try substituting cauliflower rice for sushi grade rice. You can also modify it easily by using different vegetables based on seasonal harvests.
