This unique, flavorful and totally Paleo recipe will make you fall in love with classics all over again. Our key ingredients are sweet potatoes and grass-fed beef. Sweet potatoes are naturally sweet and flavorful while grass-fed beef gives unbeatable taste and nutrition.
Ingredients (for 4)
- Medium sweet potatoes - 4 - peeled and cubed
- Grass-fed ground beef - 1 lb
- Large onion - 1 - finely chopped
- Garlic cloves - 3 - minced
- Organic carrots - 2 - diced
- Organic peas - 1 cup
- Tomato paste - 2 tablespoons
- Dried rosemary - 1 teaspoon
- Dried thyme - 1/2 teaspoon
- Organic chicken broth - 1 cup
- Ghee - 2 tablespoons
- Extra virgin olive oil - 2 tablespoons
- Sea salt - to taste
- Black pepper - to taste
Preparation

Step 1 - 🔥🌡️⏲️Preheat your oven to 400°F.

Step 2 - 🥔🧂💧Boil sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and mash with ghee, salt and pepper.

Step 3 - 🍳🧅🧄In a pan, heat olive oil over medium heat. Add onion, garlic and cook until soft.

Step 4 - 🥩🍳💦Add ground beef to the pan and cook until browned. Drain off any excess fat.

Step 5 - 🥕🍅🌿🥣Add carrots, peas, tomato paste, rosemary, thyme to the pan. Stir well.

Step 6 - 🐔🍲🔥Pour in chicken broth, bring to a boil, then reduce heat and let it simmer until sauce thickens.

Step 7 - 🥩🥔🥣Spoon the beef mixture into a baking dish, top evenly with the mashed sweet potatoes.

Step 8 - 🔥🍽️⏲️Bake in the preheated oven for 25-30 minutes, or until the top is browned and crispy.

Step 9 - ❄️⏲️🍽️Let cool a bit before serving.
Additional
Traditionally, shepherds pie is made with mashed potatoes and lamb. Swapping potatoes for sweet potatoes and using grass-fed beef shakes up the tradition but still mantains the morale of the story. Feel free to swap vegetables or add in more herbs and spices to adjust to your taste! Kids may help in mashing the potatoes or layering the pie.
