This delightfully warm dish is a lovely departure from traditional French cuisine, and yet, captures its essence beautifully. Haricot vert, the slender French cousin of the green bean, and sweet rainbow carrots co-star in this vegan masterpiece alongside crispy roasted chickpeas. Seasoned with herbes de provence and crushed garlic, this dish brings a touch of rustic French charm to your table!
Ingredients (for 2)
- Haricot vert - 200g - trimmed
- Rainbow carrots - 4 medium - peeled and cut into sticks
- Canned chickpeas - 1 (15 ounce) can - rinsed, drained and dried
- Garlic - 2 cloves - pressed
- Herbes de provence - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste

Step 1 - 🔥🍲💧Preheat your oven to 400°F (204°C). Spread the rinsed, drained and dried chickpeas on a baking sheet. Drizzle them with 1 tablespoon of olive oil and sprinkle with half of the Herbes de Provence, salt and pepper. Mix well so the chickpeas are evenly coated.

Step 2 - 🔥🥘⏲️Put the chickpeas in the preheated oven and bake them for 20-30 minutes. Shaking the pan halfway through to ensure they are evenly crisped.

Step 3 - 🍲🔥🧄When the chickpeas have about 10 minutes left, heat the remaining tablespoon of olive oil over medium-high heat in a large pan. Add the garlic and cook until it's fragrant.

Step 4 - 🥕🌿🔥Put the rainbow carrots sticks into the pan and sauté them for about 5 minutes. Next, add the trimmed haricot verts, sprinkle them with the rest of the Herbes de Provence, salt, and pepper. Continue to sauté until the beans are bright green and slightly tender, this should be about 5 more minutes.

Step 5 - 🍽️🥗🥘For serving, divide the vegetable medley evenly between two plates and top them with the roasted chickpeas.
Additional
The herbes de Provence lend a unique taste to this dish. Feel free to experiment with those based on your preference. Also, kids can participate in mixing the veggies and chickpeas with the seasonings.
