This recipe is a fun twist on French cooking with the use of Salmon as the star of the dish, complemented by tangy caper-dill crème fraîche and tender haricots verts. The warm, flaky salmon juxtaposed with the crisp beans and smooth cream makes for a delightful combination of textures and flavors.

Preparation

  1. Step 1 - 🍋🥣🌿
    In a small bowl, mix together 1/2 cup of crème fraîche, 1/4 cup of finely chopped dill, 2 tablespoons of rinsed and chopped capers, and the zest of 1 lemon. Set aside for later use.
  2. Step 2 - 🔥🍳🐟
    Heat a tablespoon of olive oil in a large pan over a medium-high heat. Season 4 salmon fillets with salt and pepper on both sides. Place the fillets into the pan skin-side up, cook for 5 minutes. Turn them over and cook for another 3 minutes. Remove the fillets from the heat to rest.
  3. Step 3 - 💧🌱🥵❄️
    While the salmon is cooking, blanch 1 lb of trimmed haricots verts in boiling water for about 2 minutes, until they become bright green and slightly tender. Drain the beans, then immediately plunge them into ice water to halt the cooking process and retain their color.

    In the same pan used to cook the salmon, sauté the blanched haricots verts and 1 cup of diced cherry tomatoes for a couple of minutes in some olive oil. Season with salt, pepper, and a splash of lemon juice.

    To serve, place a pile of the beans and tomatoes in the center of each plate. Lay a cooked salmon fillet on top, skin-side down. Top the salmon with a generous spoonful of the prepared caper-dill crème fraîche, and garnish with a sprig of dill.

Additional

For a little extra lemon flavor, finely grate some extra lemon zest on top just before serving. If you can't find crème fraîche, full-fat sour cream is a suitable substitute. Kids can get involved by helping to mix the crème fraîche sauce, or even rinsing and trimming the beans.
