Persimmon Congee with Crispy Bacon and Scallions

This is a brunch recipe inspired by the traditional Chinese dish 'Congee' with a beautiful seasonal twist, featuring the star ingredient Persimmon. - Ripe persimmon - 1 - peeled and diced
- Jasmine rice - 1/2 cup - soaked and rinsed
- Chicken broth - 4 cups
- Bacon strips - 4 - sliced into halves
