This dish is a modern twist on classic American fare, featuring the seasonβs darling: pumpkin. You would taste these sweet tropical gourds in a whole new avatar. We have exploited the versatility of pumpkins by using it in two ways, as a subtly sweet and spicy puree and as a savory stuffed roll, complimented by the smoky walnut kernels and velvety goat cheese.
Ingredients (for 2)
- Small pumpkin - 2 - halved and seeded
- Goat cheese - 100g - crumbled
- Walnut kernels - 50g - roughly chopped
- Smoked paprika - 1 tsp - none
- Maple syrup - 2 tbsp - none
- Salt - to taste - none
- Black pepper - to taste - none
- Fresh thyme - a handful - none
- Garlic - 2 cloves - minced
- Olive oil - as needed - none
Preparation

Step 1 - π‘οΈππPreheat your oven to 350Β°F and line a baking sheet with parchment. While the oven preheats, halve and seed your pumpkins.

Step 2 - ππ§π§Brush the pumpkin halves with olive oil, sprinkle with salt, and bake for 45-50 minutes until they are tender.

Step 3 - π΄ππ§Scoop out the flesh from 3 halves of the pumpkins and puree in a blender, season with salt, pepper, and maple syrup. Dice the flesh from the remaining half and mix with minced garlic, crumbled goat cheese, smoked paprika, salt, and black pepper.

Step 4 - ππ₯§π₯£Form the mixture into two portions, place them on the empty pumpkin skins, drizzle with the remaining maple syrup and bake for an additional 15 minutes.

Step 5 - π₯π₯π₯While the pumpkins bake, toast the chopped walnuts in a pan over medium heat and sprinkle with smoked paprika.

Step 6 - π½οΈπ₯πΏSpread the pumpkin puree on each plate, add the stuffed pumpkin on top, and garnish with the smokey walnuts and fresh thyme.
