Preparation

    Preheat oven to 425°F and toss the carrots in olive oil on a baking tray. Roast these for 20-25 minutes until tender and caramelized.

    While the carrots are roasting, heat 2 tablespoons of butter in a large pan over medium heat. Add the onions and garlic, and sauté until translucent.
