To tackle the crisp breeze of the season, we're going back to the heart of comforting American cuisine with a unique twist. This dish is all about celebrating the humble Carrot, uplifting its earthy sweetness into a savory delight.
Ingredients (for 2)
- Large carrots - 2 - peeled and cut into 1-inch pieces
 - Olive oil - 1 tbsp
 - Arborio rice - 1 cup
 - Large onion - 1 - finely chopped
 - Garlic - 2 cloves - minced
 - White wine - 1/2 cup
 - Vegetable stock - 4 cups
 - Parmesan cheese - 1/2 cup - grated
 - Salt - 1/2 tsp
 - Black pepper - 1/4 tsp
 - Unsalted butter - 4 tbsp
 - Sage leaves - 6-8 fresh
 
Preparation

                    Step 1 - 🥕🔥⏲️Preheat oven to 425°F and toss the carrots in olive oil on a baking tray. Roast these for 20-25 minutes until tender and caramelized.

                    Step 2 - 🍳🧅🔥While the carrots are roasting, heat 2 tablespoons of butter in a large pan over medium heat. Add the onions and garlic, and sauté until translucent.
 - 
                    Step 3 - 🥘🍚⏲️Add Arborio rice to the pan, cook it for about 2-3 minutes until slightly toasted.
 - 
                    Step 4 - 🍷🥘⏳Pour in the wine, stir until it is fully absorbed. Gradually add vegetable stock, always wait for the liquid to be completely absorbed before adding more. This process should take around 18-20 minutes.

                    Step 5 - 🔪🥕🔁Halfway through roasting, chop half of the roasted carrots into smaller pieces and blend the rest into a puree.
 - 
                    Step 6 - 🥣🥕🧂After the risotto has been cooked, stir in the carrot puree, parmesan, salt, and pepper until it's creamy.
 - 
                    Step 7 - 🍳🌿🔥In a small saucepan, heat the remaining butter over medium heat until it starts to brown, add the sage leaves and cook until crispy.

                    Step 8 - 🥣🥕🧀Serve the risotto with the chopped roasted carrots on top and a drizzle of the brown butter sage on top. Sprinkle with extra parmesan if desired.
 
Additional
This dish can be easily modified to match dietary restrictions - gluten-free, dairy-free and all. Swap out the Parmesan for a vegan alternative or use quinoa in place of Arborio for a gluten-free variant. While roasting the carrots, kids can assist you in stirring the risotto. Remember, the key to a creamy risotto is to add broth gradually and keep stirring!
