We combine it with apple slices and freshly picked grapes, complemented with a tangy balsamic reduction, introducing a fine blend of flavors that is comforting yet full of surprises.
Ingredients (for 4)
- 2 heads of cauliflower - 2 heads - sliced into 2-inch thick steaks
- 2 granny smith apples - 2 - cored and diced
- 1 cup of red grapes - 1 cup - halved
- 1 lemon - 1 - zest and juice
- 1/2 cup of balsamic vinegar - 1/2 cup
- 3 tablespoons of olive oil - 3 tablespoons
- 2 garlic cloves - 2 - minced
- Salt - to taste
- Freshly ground black pepper - to taste

Step 1 - π₯π‘οΈβ²οΈPreheat the oven to 425Β°F (220Β°C).

Step 2 - π₯¦ποΈπ§Brush cauliflower steaks with 1 tbsp of olive oil, sprinkle with minced garlic, salt, and freshly ground black pepper.

Step 3 - π₯¦π₯β²οΈPlace the brushed cauliflower steaks in the preheated oven, roast for 20 minutes, or until they are tender and slightly charred.

Step 4 - πππWhile the cauliflower is roasting, combine the diced Granny Smith apples, halved red grapes, and zest of a lemon in a bowl.

Step 5 - πΆπ₯β³In a small saucepan, bring the 1/2 cup of balsamic vinegar to a boil, reduce heat, and simmer until it's reduced to half. Be careful not to burn.
